<P>PROBLEM TO BE SOLVED: To prevent the quality degradation of a treated object due to drain splashing on the treated object 2 by swirling up the drain by steam in a smothering operation in a smothering apparatus comprising a steam injection port 11 in the bottom part of a treating vessel 1 and introducing steam into the treating vessel 1 to heat the treated object 2 with the heat of the steam. <P>SOLUTION: The smothering apparatus for smothering food by introducing steam into the treating vessel 1 is adapted to compute the maximum drain quantity from the weight of the treating vessel of the smothering apparatus, specific heat of the treating vessel, the quantity of heat radiation from the treating vessel, the maximum treatment quantity, specific heat of the treated object, the maximum temperature rise speed and steam enthalpy, to obtain a drain discharge valve open shortest period and a drain discharge valve open time corresponding to the computed maximum drain quantity, and to always perform drain discharge for the part corresponding to the generated quantity of drain by opening a drain discharge valve only for the drain discharge valve open time in the drain discharge valve open shortest period. <P>COPYRIGHT: (C)2012,JPO&INPIT |
