The present invention relates to a process for preparing an N-acetyl-D,L-leucine mixture, and in particular a racemic mixture, which comprises the reaction consisting of racemisation of a base addition salt of N-acetyl-L-leucine or of N-acetyl-D-leucine in the presence of acetic anhydride. The present invention also relates to a process for preparing N-acetyl-leucine which comprises the reaction consisting of continuous-flow acetylation of a base addition salt of leucine in the presence of acetic anhydride.
