PURPOSE: A producing method of pizza dough using a liquid starter is provided to offer soft texture and excellent flavor to the pizza dough, and to enable users to mass produce the dough with the short aging time. CONSTITUTION: A producing method of pizza dough using a liquid starter comprises the following steps: mixing 100 parts of water by weight and 0.5-1.5 parts of yeast by weight to obtain a liquid mixture; mixing 100 parts of flour by weight, 40-60 parts of liquid mixture by weight, and 5-20 parts of pre-mix for pizza by weight to obtain a flour mixture; stirring the flour mixture with a mixer to obtain the dough; dividing the dough into constant weight, and aging the divided dough at 0-5 deg C for 5-20 minutes; molding the firstly aged dough, and inserting the molded dough into a pan; secondly aging the dough at 60-70 deg C for 10-30 minutes; and heating the dough in an oven after resting the dough at room temperature. |
