It is an object of the present invention to provide a process for producing acrylamide with improved quality and a process for producing an acrylamide-based polymer wherein even if an acrylamide-based polymer having a high molecular weight is produced using the above acrylamide, a polymer excellent in water solubility and color tone can be obtained. According to the present invention, acrylamide with improved quality can be obtained by adding at least one compound selected from the group consisting of dimedone, barbituric acid, hydantoin and salts thereof and/or at least one salt of the above compound to acrylamide which is obtained by hydrating acrylonitrile using a bacterial cell containing nitrile hydratase or a substance obtained by treating the bacterial cell.
