PURPOSE: Seasoned soy sauce using onion and effective microorganisms, and a producing method thereof are provided to remove the unique bad smell of conventional soy sauce. CONSTITUTION: A producing method of seasoned soy sauce comprises the following steps: mixing 1kg of onion, 150-300g of radish, 50-70g of spring onion, 7-10g of pepper, 100-150g of mackerel, 2-5g of foeniculum vulgare, and 10-20g of turmeric, and double boiling the mixture before filtering to obtain a liquid seasoning mixture; fermenting rhynchosia volubilis to obtain fermented rhynchosia volubilis; mixing the fermented rhynchosia volubilis, the liquid seasoning mixture, and 20-50ml of effective microorganisms, and fermenting the mixture before filtering; and adding 30-70g of salt into the filtrate to obtain the seasoned soy sauce. |
