The present invention is related to the food industry in general, and particularly to the field of food engineering and technology, and development of novel food products and mainly referring to a rice-based precooked food product, which is characterised in that it comprises a mixture of rice flour and/or uncooked pieces of rice, with water, spices and/or specific natural and/or artificial flavourings and proteins; which mixture is precooked by thermoplastic extrusion in order to redirect the structure thereof and provide a specific extruded form and a drying at a final humidity lower than 10%.
