<p>Separately isomerizing bitter substances during brewing process, comprises mixing a hop product with an aqueous fluid and heating for isomerizing the bitter substances. The mixture of the aqueous fluid and the hop product is not only heated to a maximum temperature and maintained at this temperature for achieving a high isomerization degree, but also passed through a temperature profile during which the mixture in a first step is heated to a temperature T1 and maintained hot for a time t1, and the mixture in a second step is cooled to a temperature T2 and maintained hot for a time t2.</p> |
