<P>PROBLEM TO BE SOLVED: To provide a high production technology of GABA, using barley as the material, and especially, for efficiently producing in large quantity, GABA-containing GABA barley and GABA barley bran, and GABA-containing bran supernatant liquid, using barley. <P>SOLUTION: A method for highly producing GABA barley and GABA barley bran highly containing γ-aminobutyric acid, and GABA-containing bran supernatant liquid includes mixing barley grains refined to 5-35% with a barley cleaning machine, and a glutamic acid solution adjusted to pH 3-7 in 0.3-3% concentration, so as to efficiently peel skin because of hard barley skin, and soaking the mixture for one hour to one night (about 15 h) at room temperature, and similarly, soaking it for one hour to one night followed by draining, and leaving the product for one night at room temperature so as to change glutamic acid to γ-aminobutyric acid (GABA) owing to the action of glutamic acid decarboxylase contained in barley. <P>COPYRIGHT: (C)2012,JPO&INPIT |
