The present invention relates to the field of flavour modulation in foodstuffs, beverages, tobacco products, oral care products and the like. In particular, the invention relates to substances that are capable of improving, especially enhancing and complementing, sweet flavour impact of other flavour and/or taste imparting substances present in the aforementioned products. The flavour modulating substances of the invention are represented by the following formula (I)
Suitable examples of the present flavour modulating substances include p-coumaric acid, isovanillic acid, 4-methoxycinnamic acid, 3-hydroxy-4-methoxycinnamic acid, 4-methoxymandelic acid, p -hydroxy- m -methoxymandelic acid, 2-oxo-3-phenyl-propionic acid, piperonylic acid, 4-methoxybenzoic acid, edible salts thereof and edible esters thereof. |
