PURPOSE: A producing method of canned food using acipenser sinensis is provided to offer the chewy texture and the savory taste of the acipenser sinensis. CONSTITUTION: A producing method of canned food using acipenser sinensis comprises the following steps: defrosting acipenser sinensis in water for 2~6hours, removing cephalic segments and intestines, and washing the obtained fish meat; dipping the fish meat in a marinade composition containing green tea and herbs for 12hours, and steaming; cooling the fish meat for 12~24hours, cutting the fish meat into the size for an empty can, and washing the empty can; inserting the fish meat, and adding canola oil, green tea cream sauce, red pepper sauce, or teriyaki sauce before sealing the can; and sterilizing the sealed can at 115deg C and cooling. |
