FIELD: food industry. ^ SUBSTANCE: device for vacuum drying of biological materials includes a sublimator in the form of a sealed chamber with shelves for placement of trays with products connected by means of nipples and vacuum valves to the desublimator while the desublimator is connected to the system of non-condensable gases withdrawal. The device has an outlet nipple with vacuum valves connecting the sublimator to the system of non-condensable gases withdrawal allowing to perform the material drying process in the modes of vacuum sublimation drying and cold vacuum drying. ^ EFFECT: product dehydration under vacuum action without the desublimator usage at the stage of additional drying of the product, reduction of electric energy costs, reduction of operating load upon the equipment, reduction of an individual production cycle duration. ^ 1 dwg
