FIELD: food industry. ^ SUBSTANCE: invention relates to dairy industry and is intended for usage during production of cheese at minor sized cheese factories and family cheese dairies. According to the invention, the drainage table has a table top of stainless steel on four legs with wheels and boards; the table top is inclined at an angle of 1.5-2 to one side that has an aperture in the board 1. On the table side opposite the aperture 1 there is a recession (sump 2) with a bottom and a nipple 3 for drain and removal of whey occupying 1/4 - 1/3 of the table top area. Inside the sump 2 a perforated stainless steel basket 4 is placed. The basket 4 freely fits in the sump 2, failing too reach its bottom 10-20 cm off: on one of the sides the basket 4 is attached so that to enable its unobstructed egress from the sump 2 with the help of the handle 5 while the upper edge of another side is attached on the axis 6 so that to enable rotation. On one corner of the table there is a lever 7 with a stop 8 and a support platform 9 rigidly attached to the ring on the two boards walls with a load 10 positioned on the lever so that to enable its movement along and fixation on the lever 7. ^ EFFECT: invention enables to provide for an opportunity of cheese mass pre-pressing with more complete separation of whey and without loss of cheese grain. ^ 1 dwg |
