PURPOSE: A producing method of gelatinized and extruded noodles containing protein is provided to secure the original shape of noodle sheets after cooking at the high temperature. CONSTITUTION: A producing method of gelatinized and extruded noodles containing protein comprises the following steps: adding water to starch grains, and kneading to obtain dough in a swollen state; adding the pressure and heat to the dough to obtain an alpha state; drying the gelatinized dough at room temperature to obtain a gel type beta-structure; adding protein into the dough, and physically re-gelatinizing to obtain a sol state; and extruding the dough through a nozzle to obtain the noodles.
