The present invention relates to a Lithospermum erythrorhizon pigment extract having an enhanced degree of water solubility, and to a production method therefor, and more specifically relates to a Lithospermum erythrorhizon pigment extract in which the degree of water solubility of shikonin and shikonin derivatives is increased; shikonin being the principal Lithospermum erythrorhizon pigment component. By increasing the degree of water solubility of Lithospermum erythrorhizon pigment, red rice wines can be provided which are able to give a satisfactorily red colour even in low-proof wines having a low alcohol content, and Lithospermum erythrorhizon pigment can be provided as a natural red pigment for various fields including food, medicine and cosmetics, and hence the present invention can be expected to be used advantageously in various industrial fields. |
