Preparing protein and enzyme concentrates with low salt-content by carrying out precipitation from proteinaceous culture solns. or culture filtrates with anionic,-cationic- or amphoteric synthetic tanning agents. The following extraction of the inorganic salts and tanning agent is carried out with water or mixts. of water and organic solvents esp. mono- or polyvalent alcohols and water-miscible ketones, glycol ethers, dioxan and tetrahydrofuran. The synthetic tanning agents used give the same precipitation at much lower cost.
