<P>PROBLEM TO BE SOLVED: To correctly determine an occurrence of an overheated state of a heater and thus cooking oil in a fryer before the occurrence, and to reliably prevent overheating. <P>SOLUTION: An operation for calculating an information amount ΔK for temperature-change is used as a unit measurement frame operation on the basis of a value added by an n-1 adjacent measurement difference temperature value Kdf, and the unit measurement frame operation is repeated while shifted in a prescribed cycle td as time passes to calculate the information amount ΔK for temperature-change in each cycle td.
