<P>PROBLEM TO BE SOLVED: To provide a method for producing polished rice having easiness of eating of polished rice and a nutritional value equal to that of unpolished rice (higher than that of unpolished rice depending on nutritional elements): and to provide polished rice produced by the method. <P>SOLUTION: The method for producing polished rice comprises: germinating unhulled rice; boiling (parboiling) the germinated unhulled rice; drying the boiled unhulled rice; removing hulls from the unhulled rice; and polishing the unpolished rice from which the hulls are removed to produce polished rice. In the method, the odor is removed from the unpolished rice or the polished rice to obtain easy-to-eat polished rice, and also the odor of the polished rice is removed again after rice polishing to obtain the polished rice easier to eat. The polished rice is such that nutrients are transferred from the rice hull or/and bran to endosperm by germinating unhulled rice and boiling the germinated unhulled rice.
