A process for the manufacture of a snack-type food based on nopal fleshy leaves, sugar, agave honey, citric acid and salt mainly. The product obtained from said process is ideal for being consumed by children as a snack. Due to its sweet-and-sour flavour, adults also like to consume this inventive snack. The addition of agave honey provides a characteristic flavour and soft consistency to the snack, which is highly recommended for elderly people and those suffering from diabetes.
