PURPOSE: An instant food composition and a producing method thereof are provided to enable users to easily eat the composition using freeze-dried fermented soybeans and brown rice. CONSTITUTION: A producing method of an instant food composition comprises the following steps: mixing 80-90wt% of grains including brown rice, and 10-20wt% of freeze-dried fermented soybeans; preparing a saline solution; spraying the saline solution on the mixture, and drying the mixture for preparing a puffing material; puffing the puffing material; and cutting the puffed material into 6-14mm before measuring and packaging. The grains additionally include glutinous brown rice, black rice, or glutinous barley. The saline solution is obtained by using bamboo salt.
