PURPOSE: A producing method of a garlic concentrate capable of using as a food additive is provided to offer the improved content of allicin contained in the garlic concentrate as an active ingredient to users. CONSTITUTION: A producing method of a garlic concentrate comprises the following steps: preparing garlic powder, and inserting the garlic powder into a filtering net; inserting the filtering net into an extraction tank, and low temperature extracting the garlic powder at 0-25 deg C; mixing 100 parts of garlic extract by weight with 0.1-10 parts of refined salt by weight, 0.1-10 parts of dextrin by weight, 1-50 parts of low saccharide, 0.5-30 parts of arabic gum by weight, and 0.2-20 parts of garlic oil by weight; stirring the mixture using a homogenizer, and vacuum concentrating the mixture; and filtering the concentrate with a filtering cloth, and packaging.
