PURPOSE:To prepare a sea urchin product having a unique flavor and improved storage stability, by washing urchin raw material with water of the adjoining sea reduced through ultraviolet irradiation, and by removing impurities simultaneously. CONSTITUTION:Seawater of the adjoining sea is introduced into the ultraviolet irradiation device 1 lined with the aluminum foil 2, and sterilized with ultraviolet rays of wavelengths 2,100-3,000Angstrom by means of a plurality of lamps 3, and reduced into natural seawater. A sea urchin raw material is washed with the seawater thus obtained to remove impurities, and a raw sea urchin material is obtained. |
