PURPOSE: Pork skin jelly using hovenia dulcis, and a producing method thereof are provided to remove the unique bad smell of pork skin by boiling the pork skin with hovenia dulcis boiled water. CONSTITUTION: A producing method of pork skin jelly using hovenia dulcis comprises the following steps: mixing the hovenia dulcis with water in a weight ratio of 10:20, and boiling the mixture for 4-5 hours at 80 deg C to obtain hovenia dulcis boiled water(S110); removing hair and subcutaneous fat from the pork fat, and cutting and dehydrating the pork skin before rapidly freezing(S130); washing codonopsis lanceolata or platycodon grandiflorum, and cutting(S150); mixing the pork skin with the hovenia dulcis boiled water, and boiling for 3-4 hours before separating the pork skin(S310); stirring the remaining liquid for concentrating, and spreading a hemp cloth on a square molding frame; pouring half of the liquid to the molding frame, and spreading the cut codonopsis lanceolata or platycodon grandiflorum; pouring the rest of the pork skin liquid into the frame, compressing before settling the liquid for 30-40 minutes, and separating the hardened liquid from the frame before aging in a refrigerator(S330). |
