<P>PROBLEM TO BE SOLVED: To provide dressings which can control syneresis. <P>SOLUTION: The compound emulsion dressings include a polyglycerol condensation ricinoleic acid ester in which the esterification degree exceeds 30%, and the degree of ricinoleic acid condensation is 5-8.
