The method involves carrying out a mechanical cleaning (17) adjacent to a chemical cleaning (18) and a thermal disinfection (19). The chemical cleaning is carried out in three stages in such a manner that dishes are exposed (20) with a mixture of water and chemical cleaning agent, an impact of mixture of water and cleaning agent on the dishes for predetermined time period is enabled (21) and a rinsing of the dishes is carried out (22) with fresh water. A water tank is filled with the fresh water while enabling the impact of the mixture of water and cleaning agent on the dishes.
