摘要 PURPOSE: A producing method of cold noodles, wheat flakes noodle soup, and chopped noodles containing a lacquer extract without toxicity is provided to offer the functionalities of lacquer to users. CONSTITUTION: A producing method of cold noodles, wheat flakes noodle soup, and chopped noodles containing a lacquer extract without toxicity comprises the following steps: inserting 9wt% of lacquer extract without toxicity to 91wt% of flour with 18% of salt; compressing the obtained mixture, and aging the mixture for 3 hours at 25-30 deg C; compress-molding the aged dough with a noodle making machine; and extruding the obtained dough into various shapes.
