METHOD OF PRODUCING SUGAR ALCOHOL

PROBLEM TO BE SOLVED: To provide a method of producing a sugar alcohol, capable of efficiently synthesizing a sugar alcohol from a saccharide under a mild condition.

SOLUTION: The method of producing a sugar alcohol comprises (1) hydrolyzing a saccharide and subsequently reducing the resulting hydrolyzate or (2) reducing a monosaccharide and an oligosaccharide, using a solid catalyst including transition metal supported by a carbon support in the presence of water in an atmosphere of a hydrogen partial pressure of 0.1 to 1 MPa. Ruthenium (Ru) is preferable as the transition metal. Cellulose having been subjected to a crystallinity reduction treatment is preferable as the saccharide.
