The present invention relates to a method for using Saccharomyces Cerevisiae to produce ethanol from fructan, and a composition for producing ethanol, and particularly, to: a composition using fructan, present in large quantities in non-grain energy crops, as a source of carbon to efficiently produce bio ethanol; a culture medium containing fructan; ethanol using same; and a method for producing food containing ethanol. When the strain of the present invention is used, a preprocessing step can be removed, thereby contributing to the simplification and cost reduction of processing.
