PURPOSE: A producing method of an extract using blue-backed fish is provided to remove the unique fishy smell from the blue-backed fish before obtaining the extract. CONSTITUTION: A producing method of an extract using blue-backed fish comprises the following steps: removing intestines from the blue-backed fish, and washing before slicing; boiling the blue-backed fish slices, and removing the water for removing fat extracted from the fish before firstly drying; secondly drying the blue-backed fish after crushing to obtain fish powder; adding 0.5-1wt% of edible oil into water, and heating the mixture at 100deg C before adding the fish powder and stirring; cooling the heated mixture at 60 deg C, and adding 1-1.5wt% of soy sauce; aging the mixture for 10 hours, and filtering to obtain a first filtrate and residues; inserting the residues into water, and heating; cooling the heated residues before adding the soy sauce, and filtering after aging to obtain a second filtrate; and mixing the first and second filtrates, and adding 5wt% of refined salt before heat-concentrating.
