RICE COMPOSITIONS AND COATING METHODS

Disclosed is a coated whole grain rice composition comprising parboiled whole grain rice that has been: partially milled to remove part of the bran and germ, wherein the milling removes from 2% to 4% w/w dry weight basis of the whole grain rice and wherein the parboiled whole grain rice has a coating comprising at least bran and a gum, wherein the bran content of the whole grain rice is at least 7% w/w dry weight basis and the bran in the coating has an average particle size of less than 200 µm. Also disclosed is a method for preparing a coated rice composition comprising the steps of: parboiling whole rice grains having bran and germ; partially milling the rice grains to remove part of the bran and germ, wherein said milling removes from 2% to 4% w/w dry weight basis of the whole grain rice; gum; preparing a coating composition comprising at least added bran and a coating the dry, partially milled rice grains with the composition; and drying the coated rice grains to produce dry coated rice grains, wherein the step of coating is performed with an amount of the composition such that the coated rice composition comprises at least 7% w/w dry weight basis of bran.
