<P>PROBLEM TO BE SOLVED: To objectively, simply, and promptly predict elution ratio of a flavor ingredient to the mouth by chewing for food containing a chewing base material represented by chewing gum. <P>SOLUTION: Correlation between difference (ΔI) between a retention index to be obtained by gas chromatograph analysis using a polarity column for the flavor ingredient and a retention index to be obtained by gas chromatograph analysis using a nonpolar column and the mouth elution ratio by chewing of the flavor ingredient in the chewing base material is preliminarily calculated, and mouth elution ratio by chewing is predicted based on a measured value of ΔI and the correlation for the flavor ingredient which constitutes the flavor compound to be added to the food containing the chewing base material. <P>COPYRIGHT: (C)2012,JPO&INPIT |
