<P>PROBLEM TO BE SOLVED: To provide a knife holder of which operability is improved and simplified, and thereby safe operation of which is sufficiently guaranteed. <P>SOLUTION: A blade guard 2 is configured so as to be arranged on three different predetermined positions S, V, W and a means having the following effects is arranged in accordance with respective positions S, V, W. Namely, the means has an effect (a) that on the upper protection position S, the position of a knife holder 1 on a guide path 6 is simultaneously fixed, an effect (b) that on a center knife holder sliding position V, the knife holder 1 can be accessed and the position fixing of the knife holder 1 on the guide path 6 can be released simultaneously with the access, and an effect (c) that on the lower knife replacement position W, the knife holder 1 can be freely accessed and the position of the knife holder 1 on the guide path 6 is simultaneously fixed.
