<P>PROBLEM TO BE SOLVED: To provide an alcohol-fermenting yeast having resistance to a fermentation-inhibiting substance, limonene, and to provide a method for producing ethanol therewith. <P>SOLUTION: There are provided the alcohol-fermenting yeast which is Saccharomyces cerevisiae (Accession Number NITE P-890) which can proliferate in the presence of limonene having concentration of 0.1 to 0.5 wt.% and having resistance to the limonene, and the method for producing the ethanol therewith. <P>COPYRIGHT: (C)2012,JPO&INPIT |
