METHOD OF MAKING FISH CAKE BY HEATING WITH SUPERHEATED STEAM

PURPOSE: A producing method of fish cake by superheated steam heating is provided to use superheated steam instead of frying the fish cake to offer chewy texture in the inside of the fish cake. CONSTITUTION: A producing method of fish cake by superheated steam heating comprises the following steps: molding a fish paste mixture; fixing the shape of the fish paste mixture with steam; and cooking the fish paste mixture with superheated steam for 1-4 minutes. The temperature of the superheated steam is 300-350 deg C.
