A method of chemically dosing a wet air scrubber that includes measuring at least one property of a solid or liquid material in a rendering process, measuring at least one property of a gas stream before it enters the wet air scrubber, and/or measuring at least one properly of a water stream of the wet air scrubber, comparing the magnitude of the measured property to a target value of the property, and adjusting the chemical dose rate of the wet air scrubber as indicated.
