The present invention relates to the production of an active oxygen-absorbing compound that comprises an oxygen-absorbing substance formed by sodium erythorbate and an inorganic salt of a transition metal, which are encapsulated using the sol-gel method. Said compound may form part of the structure of the packaging for products sensitive to oxidation or be placed in the surrounding atmosphere in order to reduce the oxygen concentration. The invention describes the method for producing the oxygen absorber and also for the encapsulation and incorporation thereof in polymer matrices.
