PURPOSE: A method for making Makkoli containing Nelumbo nucifera is provided to ensure rich flavor, freshness, soft texture, and sweet taste. CONSTITUTION: A method for making Makkoli containing Nelumbo nucifera comprises: a step of dipping washed rice, sieving, and steaming to prepare hard-boiled rice; a step of mixing 30-39 wt% of the hard boiled rice, 1-2 wt% of conventional nuruk, 0.9-1.7 wt% of improved nuruk, 0.1-0.3 wt% of yeast, and 57-68 wt% of water and fermenting at 20-30°C Celsius to prepare Suldeot(rice-wine mash); a step of mixing water and wheat flour to prepare wheat flour paste; and a step of steaming the wheat flour and cooling at 30°C.
