A yeast having increased cellular content of sulfur-containing compounds such as ?-glutamylcysteine and glutathione can be obtained by combining selenic acid sensitivity and the property of red color development. The method to allow red color development includes imparting adenine-auxotrophy and culturing on a minimum medium supplemented with methionine.
