<p>A process for the production of carboxylic acid amides excellent in long-term color stability; and a process for the production of betaines, quaternary ammonium salts and amine salt derivatives by using the amides. In particular, a process for the production of carboxylic acid amides, characterized by conducting a reaction of a higher fatty acid or an ester thereof as represented by the general formula (1) with a diamine represented by the general formula (2) in the presence of an organophosphonic acid represented by the general formula (3) or by adding an organophosphonic acid represented by the general formula (3) either after the reaction or after the removal of excess diamine following the reaction: (1) (wherein R1 is C5-23 straight-chain or branched alkyl, alkenyl, or hydroxyalkyl; and R2 id hydrogen, C1-4 straight-chain or branched alkyl, or a residue derived from a glyceride by removing one acyloxy group) (2) (wherein R3 and R4 may be the same or different from each other and are each C1-4 alkyl; and n is an integer of 2 to 4), (3) (wherein R5 is hydrogen or C1-3 lower alkyl; and Z1, Z2, Z3 and Z4 are each independently hydrogen or an alkali metal).</p> |
