PURPOSE: A producing method of red pepper paste with red ginseng using deep sea water and salt made from the deep sea water is provided to offer profitable effects of the red ginseng to the red pepper paste, and to improve the taste of the red pepper paste. CONSTITUTION: A producing method of red pepper paste with red ginseng comprises the following steps: powdering red ginseng; fermenting glutinous rice with deep sea water, and steaming; soaking malt with the deep sea water, filtering the malt, adding the steamed glutinous rice for fermenting, and extracting to make a malt extract; pouring the deep sea water to dried persimmon and jujube, boiling, and mixing with the malt extract for saccharifying; adding the red ginseng powder, red pepper powder, fermented soybean powder, and starch syrup; and adjusting the salinity with salt made from the deep sea water, and fermenting for 1month. |
