The present invention relates to a stabilizer comprising starch which contains at least one ester group as shown in formula (I), where M+ is an alkali metal, M2+ is an alkaline earth metal, R is an alkylene radical and R' is an alkyl or alkenyl group having 5 to 18 carbon atoms, and contains less than 0.1% by weight free alkyl- or alkenyl-dicarboxylic acid compounds or mixtures of these, based on the total weight of the starch, to a process for its preparation, and to its use for increasing the stability of a substance to be stabilized. |
