PURPOSE: Instant noodles containing freeze-dried rice, and a producing method thereof are provided to use the freeze-dried rice as a soup ingredient for offering the soft taste of rice starch. CONSTITUTION: A producing method of instant noodles containing frozen and dried rice comprises the following steps: washing polished rice; dipping the washed rice in 25 deg C water for 80 minutes; rapidly freezing the rice in a freeze-drier; dipping the freeze-dried rice in boiling water for 3-10 seconds for gelatinizing the surface of the rice; dipping the gelatinized rice into cold water for stopping the gelatinization; and inserting the freeze-dried rice into the instant noodles.
