PURPOSE: Reconstructed meat using chicken meat and chicken feet, and a producing method thereof are provided to offer the soft taste and the texture of the chicken feet. CONSTITUTION: A producing method of reconstructed meat using chicken meat and chicken feed comprises the following steps: cutting 99wt% of chicken meat, and adding 1wt% of salt; grinding 99wt% of chicken feet, and adding 1wt% of salt; layering the chicken meat and the chicken feet successively in a rectangular frame in three layers; compressing the layered chicken meat and the chicken feet in the pressure of 3-5kg/square centimeter; aging the compressed chicken meat and the chicken feet for 2 hours at 4-6 deg C; and freezing the obtained reconstructed meat after packaging. |
