A dough strip is made into a ring preform and cooked. Mechanical pressure is then exerted from two sides over an area of the preform, to mold a round section. Its extent transverse to the direction of pressure, is less than its height in the direction of pressure. The pressed preform is released and an inner hole is stamped out, to make the doughnut : Mechanical pressure is applied and released repeatedly, especially two or three times, during the pressing stage. Further cooking takes place between applications of pressure. Before stamping, a central portion is displaced outwardly, reducing the height of the area to be stamped out. Cooking (e.g. baking or frying) of the doughnut, may be completed after stamping. An independent claim is included for corresponding equipment. |
