<p>Disclosed is a method for detecting a guaiacol-producing bacterium in a sample, which is characterized by comprising: carrying out plate culture of the sample of a diluted product thereof on a solid culture medium for acidophilic bacteria which contains at least one compound represented by formula (1) [wherein R represents -H, -OH, -C(O)H, -C(O)CH3, -COOH, a C1-C3 alkyl group, or a C1-C3 alkenyl group, wherein the alkyl group and the alkenyl group may be substituted by -OH, -C(O)H or -COOH]; and detecting a colony formed by the culture. In a preferred embodiment, the solid culture medium for acidophilic bacteria contains 50 ppm or more of vanilic acid, and the plate culture is carried out at 20 to 55Ë C. Also disclosed are a solid culture medium for acidophilic bacteria and a kit for detecting a guaiacol-producing bacterium in a sample. The method, the solid culture medium and the kit enable the detection of a guaiacol-producing bacterium in a sample such as a fruit juice raw material rapidly and in a simple manner.</p> |
