摘要 FIELD: food industry. ^ SUBSTANCE: invention relates to meat industry, in particular, to the methods of salting of meat in the form of mince for production of meat food, in particular, cutlets. The method envisages preparation of brine based on cathode fraction of water solution of sodium salts of food acids i.e. hydrochloric and acetic acids at a ratio of 9:1 with concentration of 8-10 g/l. The cathode fraction is produced in a electrolyser -activator in continuous flow mode, the rate of catholyte and anolyte continuous flow being 5-7 l/h and 5-7 l/h accordingly, current strength being 4-5 A, till indicators of catholyte quality are: pH 10.5-12.0, ORP - 600Ç-950 mV. ^ EFFECT: method allows to simplify the technology for preparation of meat food with preset parameters of electrotreatment and indices of catholyte quality, enhance quality of the ready products. ^ 3 tbl
