PURPOSE: A bread improver formed with nature-friendly materials, and a producing method thereof are provided to prevent the degradation of the matter property and the flavor of bread. CONSTITUTION: A producing method of a bread improver comprises the following steps: mixing 79-81 parts of salt water by weight having the concentration of 5% with 0.5-1 parts of malted rice by weight, and filtering the mixture; diluting the obtained malted rice extract with water by a ratio of 40:60; mixing 100 parts of diluted liquid by weight, 94-96 parts of rice powder by weight, 4.5-5.5 parts of skimmed milk powder by weight, 0.001-0.002 parts of lactobacillus brevis by weight, and 0.3 parts of refined salt by weight; fermenting the mixture at 37-39 deg C for 16-17 hours; and adding 48-52 parts of vitamin C by weight extracted from paprika, bell pepper, kiwi, or orange. |
