<P>PROBLEM TO BE SOLVED: To provide dried fish chips such as dried bonito chips suitable for "Otsumami (food served with sake or the like)": and to provide a method for producing the dried fish chips. <P>SOLUTION: The dried fish chips such as dried bonito chips 4 are obtained by smoke-drying rough dried fish 1 so as to keep the moisture percentage thereof at about 26%, and slicing the smoke-dried rough dried bonito 1 in the direction of the fibers 2 thereof at an angle of 45°. The dried fish chips are hermetically sealed off in a bag 6 together with an antioxidant 5 to be prepared as a commercial product. As a result of such a process, the dried bonito chips 4 have soft texture and the flavor and taste of bonito which spread fully in the mouth, and thereby are served as commercial products suitable for "Otsumami". <P>COPYRIGHT: (C)2012,JPO&INPIT |
