Provided is an amperometric biosensor for histamine determination comprising a working electrode, a counter electrode and a reference electrode, wherein the working electrode is a screen-printed electrode, and wherein diamine oxidase is immobilized via drop-coating with poly (2-hydroxyethyl methacrylate) (photoHEMA) on the surface of the screen-printed working electrode. Methods of producing the sensors are also provided.
