<P>PROBLEM TO BE SOLVED: To provide a processed Japanese horseradish product to which allyl isothiocyanate is added to intensify hot flavor; and which gives unique flavor of genuine Japanese horseradish and real feeling of freshly grated Japanese horseradish. <P>SOLUTION: Japanese horseradish product contains Japanese horseradish ground substance and allyl isothiocyanate is added. It is characterized by the fact that 5-hexenyl isothiocyanate and 6-methylthiohexyl isothiocyanate are added, in which 5-hexenyl isothiocyanate contained is 44 to 194 ppm, and 6-methylthiohexyl isothiocyanate is contained at a proportion of 1.8 to 27.0 pts.wt. to 100 pts.wt. of 5-hexenyl isothiocyanate. <P>COPYRIGHT: (C)2012,JPO&INPIT |
