摘要 PURPOSE: A method for preparing unripe apples polyphenol(UAP) is provided to ensure excellent antioxidative, anti-diabetic, and anti-inflammatory activities. CONSTITUTION: A method for preapring unripe apples polyphenol(UAP) comprises: a step of treating apples with saccharolytic enzyme to prepare a polyphenol compound enhancing composition; a step of passing the composition through a porous adsorbing resin column to adsorb the polyphenol compounds; and a step of leaching the polyphenol compounds with ethanol. The saccharolytic enzyme is cellulose, hemicellulase, pectinase, or beta-glucosidase.
